Ingredients
  

  • 1/4 cup butter
  • 1/4 cup shortening
  • 3/4 cups granulated sugar
  • 1 egg
  • 1/2 tsp mint extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Pinch of salt
  • 10 drops green food coloring
  • 1/2 cup Andes creme de menthe baking chips

Instructions
 

  • In bowl, mix butter, shortening, and sugar until they are smooth.
  • Add in the egg and mint extract.
  • In another bowl, sift flour, baking powder, baking soda and salt.
  • Blend the dry ingredients into the wet ingredients.
  • Add in the green food coloring and mix.
  • Cover the dough with plastic wrap and refrigerate for one hour.
  • Roll the dough into half-inch balls and place them on an ungreased cookie sheet, about 2 1/2 inches apart.
  • Bake at 375° for 10 min.
  • Cool for 5 min, and transfer to wire rack.
  • Makes 18 cookies.
