Ingredients
  

  • Basic sugar cookie dough
  • 1 1/2 tbsp unsalted butter, melted
  • 1/4 cup sugar, plus extra amount for decorating
  • 2 tsp cinnamon
  • 1/2 cup finely chopped almonds

Instructions
 

  • Take the basic sugar cookie dough and work with half of the dough, leaving the other half in the refrigerator.
  • Roll out the dough on a floured board and form a rectangle, 13” x 9”.
  • Using a pastry brush, brush the rectangle with half of the melted butter , brushing all the way to the edges.
  • Sprinkle the surface with half of the sugar, cinnamon, and the nuts.
  • Begin rolling it up jelly roll style to form a 13” long log.
  • Slice into half inch rounds and place one inch apart on the baking sheet.
  • Flatten the round lightly with your hand.
  • Brush additional butter and sprinkle with additional sugar.
  • Bake at 350° for 20 min, until light golden.
  • Remove the cookies from the oven and cool on baking sheets for five-minutes.
  • Use a metal spatula to remove the cookies and place on a wire rack to completely cool.
  • Repeat the process for the remaining dough.
  • Store the cookies at room temperature in an airtight container.
  • Freeze for up to two months.
  • Makes 18 cookies.
