Ingredients
  

  • 1/4 cup butter, softened
  • 1 1/2 ounces cream cheese at room temperature
  • 1 egg, separated
  • 1/2 tsp vanilla extract
  • 1/2 tsp lemon zest
  • 1/2 cup powdered sugar
  • 1/2 cup all-purpose flour
  • 1/2 cup graham cracker crumbs
  • 10 ounces cherry pie filling

Instructions
 

  • In a bowl, mix together the butter, cream cheese, egg yolk, vanilla, and lemon zest until fluffy.
  • Mix in the powdered sugar and then the flour to stiffen the dough.
  • Cover the bowl with plastic wrap.
  • Refrigerate for 2 1/2 hours.
  • Remove the dough from the fridge and preheat oven to 325°.
  • Shape the dough into half-inch balls.
  • In a bowl beat the egg white until foamy.
  • Place the graham cracker crumbs in a different bowl.
  • Dip the dough balls in the white, then roll them in the graham cracker crumbs.
  • Arrange the cookie dough balls about 2 1/2 inches apart onto a greased cookie sheet.
  • Using the back of a teaspoon, make a indentation in the middle of each cookie.
  • Bake for 15 min, until cookies begin to brown on the bottoms.
  • Remove the cookies and let cool for 5 min.
  • Fill the indentation with 1/2 teaspoon pie filling for each cookie.
  • Makes 15 cookies
